Why Do You Receive El Pollo Loco Mail?
El Pollo Loco is a fire-grilled chicken chain. Pancho Ochoa was running a shoe store in 1974 when he used a family citrus marinade and an open flame because the local restaurant could not stay open. He opened 85 shops in Mexico over the next five years, then the first U.S. restaurant in Los Angeles in 1980. That Los Angeles shop is still open. Every restaurant still marinates chicken in citrus and spices and grills it over a low flame for 60 minutes. Guacamole is smashed in-house and salsa uses tomatoes, cilantro, and onion.
